font-size: medium;\">\u00bd cup chicken broth, warmed<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">\u00bd\u00a0tsp saffron<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">2\u00a0TBSP butter<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">2\u00a0TBSP flour<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">1\u00a0\u00bd cups milk, warmed<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">1 tsp vegetable oil<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">4 cups spinach leaves (approximately)<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">1 small box frozen peas, thawed<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">\u00be\u00a0tsp salt<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">\u00bc\u00a0tsp pepper<br \/>\n<\/span><span style=\"color: #000000; font-size: medium;\">8 crepes or tortillas<\/span><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions:<\/span><br \/>\n<\/strong><span style=\"font-size: medium;\"><span style=\"color: #000000;\"><strong>1.<\/strong> Combine warm chicken broth and saffron in a small bowl.<span style=\"font-family: Calibri;\">\u00a0 <\/span><\/span><\/span><span style=\"color: #000000; font-size: medium;\">Set aside.<br \/>\n<\/span><span style=\"font-size: medium;\"><span style=\"color: #000000;\"><strong>2.<\/strong> In a small saucepan, prepare sauce by melting butter, adding flour and cooking, stirring, for about 2 minutes.<span style=\"font-family: Calibri;\">\u00a0 <\/span><\/span><\/span><span style=\"color: #000000; font-size: medium;\">Add hot milk, bring to a boil and then lower heat.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Stir until smooth and thick, about 2 minutes.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Cover and remove from heat.<br \/>\n<strong>3.<\/strong> <\/span><span style=\"font-size: medium;\"><span style=\"color: #000000;\">Heat oil in a large saut\u00e9 pan over medium high heat.<span style=\"font-family: Calibri;\">\u00a0 <\/span><\/span><\/span><span style=\"color: #000000; font-size: medium;\">Add spinach and saut\u00e9 until wilted, about two minutes.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Add broth, saffron and peas, raise heat to high and bring to a boil.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Boil for about 1 minute until slightly reduced.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Reduce heat.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Add sauce mixture and shredded chicken and bring to a simmer.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Simmer for 3-4 minutes.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Add salt and pepper, and stir until heated through and slightly thickened.<br \/>\n<strong>4.<\/strong> <\/span><span style=\"color: #000000; font-size: medium;\">Warm tortillas individually in skillet over low heat.<br \/>\n<strong>5.<\/strong> P<\/span><span style=\"font-size: medium;\"><span style=\"color: #000000;\">lace one tortilla on each of four plates.<span style=\"font-family: Calibri;\">\u00a0 <\/span><\/span><\/span><span style=\"color: #000000; font-size: medium;\">Spoon one eighth of chicken mixture in one quarter of the crepe.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Fold tortilla in half and then into quarters.<\/span><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00a0 <\/span><span style=\"color: #000000; font-size: medium;\">Repeat with remaining four tortillas and remaining chicken mixture.<\/span><span style=\"color: #000000;
